Matching the Level to the Cut

Lean cuts punish extra heat. A filet or a flat iron steak taken to well done loses the little fat it had to work with, while a fatty ribeye or chuck eye stays forgiving a rung or two further up.

The exception is the safety floor. The Hand Test Reads Low

The touch test is the backup when no thermometer is at hand. The touch test for gauging steak doneness by hand maps firmness to the flesh below your thumb as you press each fingertip to it, and it tracks the ladder in roughly the right order.

Color Tells You Even Less

Color alone is not a reliable way to judge doneness, because the shade of a fresh cut shifts as the meat meets air, and the bulb over your counter shifts it again.

What the Reverse Sear Actually Specifies

Reverse searing a steak to a precise finish runs the low stage at 225F until the center reads 95 to 100F, sears the steak hard, then rests it 20 minutes, with the pull set about 10F below target so carryover lands it at 130 to 135F.

Whichever route the steak takes, the last few minutes belong to the rest.

Resting Is Where Carryover Finishes the Job

Rest the steak about 5 minutes. That window is where the largest share of the climb happens, and it is also where a host buys time to plate everything else.
